Kimberly Ong joined Lisa M. Keefe, Editor in Chief Alt Meat, on the MeatingPod podcast. In a discussion focused on the changes in regulatory approval and consumer acceptance of cultivated meat, she highlighted the positive developments. She gave high marks for work carried out within companies to assess, demonstrate, and ensure the safety of new products and for the regulatory approvals gained. Some aspects of safety assessment for cultivated meat can be carried out using well-established approaches for conventional meat products. However, she emphasized the urgent need for new assessment methods and publication of data on the safety of novel components, for example, scaffold materials or culture media components that may persist in the final product, and research on the potential impacts of changes in processing and production methods on food safety. She encouraged everyone interested in this area to participate in the Cultured Meat Safety Initiative, a collaborative effort between New Harvest and Vireo Advisors, and to participate in the Regulating the Future of Food Conference in October. The industry and research community need to collaborate and commit to transparency in safety research. This will speed up regulatory reviews, provide more consumer confidence, and ultimately make the commercialization of cultured meat safer and more affordable for everyone.
