New Fermentation-Derived Vegan Protein Source

Sustainable Bioproducts has created a new fermentation technique to cultivate a novel protein source from microorganisms. The Chicago-based startup derived its technology from research on extremophiles residing in the volcanic hot springs of Yellowstone National Park. The product is a vegan-friendly protein that contains all nine essential amino acids. It can be incorporated into other food products to increase protein content without compromising taste and is produced with minimal impact to the environment. The company’s potential to help meet the growing demand for sustainable, vegan-friendly proteins has attracted substantial backing—Sustainable Bioproducts launched with $33 million in financing in February of this year and plans to launch its product commercially in 2021.
